Apple Sheet Cake with Maple Icing

This Easter, instead of the traditional cupcakes I usually make, I wanted to do something just a tad healthier. This Apple Sheet Cake seemed to be a good choice. At least one serving of fruit and  it still counts as a dessert!

This recipe came together very quickly and made the house smell absolutely amazing! I used Gala apples, but Honeycrisp or Braeburn would work equally well.

I will be keeping this recipe in mind this fall when we go pick our own apples at the local apple orchard. Apples picked right off the tree are the best! If you haven’t had the opportunity to go pick your own, I highly recommend trying it out!

  1. Set oven to 350 degrees F. Grease or line with parchment paper a 9X13" baking pan, set aside.
  2. Peel, core, and shred one apple using a box grater. Thinly slice the other two apples. Cover and set aside.
  3. Whisk together butter, brown sugar, apple butter, eggs, and vanilla in a large bowl until smooth. Add flour, baking powder, baking soda, and salt. Use large wooden spoon to combine. Fold in dried and grated apples.
  4. Spread batter into prepared pan. Arrange apple slices on top.
  5. Bake 40 minutes or until toothpick inserted in middle comes out clean.
  6. While cake is baking, stir together the ingredients for the Maple Icing in a small bowl until smooth.
  7. Remove to wire rack. Pour Maple Icing over hot cake. Once cooled, sprinkle with cinnamon.
