I’m on a bit of a pasta kick lately. It’s so easy to boil some pasta and add a few delicious and flavorful additions to make a complete dinner! This Caramelized Lemon, Tuna, and Mozzarella Tubini is my new favorite. It’s got loads of health benefits from the tuna, namely omega 3’s and protein. While it may sound complicated, trust me, it’s not. In under 20 minutes, you can throw together this satisfying pasta dish.

To make this Caramelized Lemon, Tuna, and Mozzarella Tubini, you will need: 17 ounces tubini (you can sub any variety of pasta you’d like or have on hand,) 1 slice of bread (cut into small squares,) olive oil, 1 lemon (cut in half,) half a red onion (chopped,) 3 cloves minced garlic, 3 – 5 ounce cans tuna in oil, 8 ounces fresh mozzarella, salt and pepper.
Cook your pasta according to the package directions. Gently toast the bread in a skillet over medium heat with a little olive oil until toasty, set aside. In the same skillet, place the lemon halves cut side down and allow them to cook and caramelize, about 5-6 minutes. Set aside. Open and drain the tuna, reserving some of the oil for the finished dish. Drain the pasta, place it in the skillet used to toast the bread and caramelize the lemons. Add the chopped red onions, minced garlic, tuna, and some of the oil from the tuna cans. Toss to coat, season with salt and pepper, and remove to a platter. Top with the fresh mozzarella and some fresh parsley if desired. Squeeze the caramelized lemons over the top and garnish with the toasted bread. Serve immediately and enjoy!
