Cheesy Onion and Garlic Quick Bread (No Yeast)

Quick breads are a favorite of mine but they typically revolve around sweetened fruit or vegetables. Switch things up a bit with this savory Cheesy Onion and Garlic Quick Bread (No Yeast) recipe. With the bold flavors of cheddar, garlic and onion, each slice tastes similar but 20 times BETTER than the cheesy biscuits at Red Lobster. This quick bread features an amazing top and bottom crust of shredded Parmesan, giving this bread an additional textural treat for your eating enjoyment.

Make sure your oven rack is in the middle position and preheat your oven to 350°F. Spray a 5 X 9″ loaf pan with non-stick cooking spray. Sprinkle half of the shredded Parmesan in the bottom of the pan. A note on the shredded Parm, I used the large holes of my box grater to shred the Parm, if you’re purchasing your cheese already shredded, look for larger shreds as opposed to smaller ones to ensure the top and bottom crust comes out as desired.

In a large bowl, whisk together the flour, baking powder, cayenne, salt, pepper, minced onion and garlic powder. Pour the shredded cheddar into the flour mixture and gently stir to coat the cheese in the flour mixture. In another medium bowl, combine the egg, milk, melted butter, and sour cream. Pour the liquid ingredients into the dry ingredients all at once and stir to combine, do not over-mix. Your batter will be quite solid (that’s the way it’s supposed to be!) Pour the batter into the prepared loaf pan, smooth top, and sprinkle the remaining shredded Parm over the top. Bake for 45-50 minutes, or until a toothpick inserted comes out clean. Be aware that if your toothpick hits the shredded cheddar it may look like it’s not done, try again in a different spot. The top of the bread should be a deep golden brown when it is finished. Remove the loaf from the oven and allow it to cool on a wire rack for 5 minutes. Invert the pan and remove the bread. Allow the bread to cool for at least 30 minutes before slicing, this will improve the texture of the bread. Enjoy!
