I’m beyond ready for spring and nothing screams warm weather more than a yummy pasta salad. To make a complete meal of it, I added grilled salmon and kept the flavors fresh with tomatoes and green onions. This Fresh Tomato, Salmon and Kalamata Orzo is quick to throw together and very addicting.

To make this Fresh Tomato, Salmon and Kalamata Orzo, you will need: 3 salmon fillets (grilled, 6-7 ounces each), 1 pound box orzo (cooked and drained), 1 1/2 cups cherry tomatoes (halved), 1 cup green onions (chopped), 1/2 cup halved kalamata olives, 1 tablespoon chopped parsley, 1/2 cup olive oil, 3 tablespoons rice vinegar, 3 tablespoons kalamata olive juice, 5-6 cloves minced garlic, 1 teaspoon garlic powder, and 1/2 teaspoon each salt and pepper.
This salad is super quick. Grill or cook your salmon while the orzo cooks. Chop your tomatoes, green onions, olives and parsley. Whisk together the olive oil, vinegar, olive juice, minced and powdered garlic, and salt and pepper. Flake the salmon, drain the pasta and throw everything together in a big bowl. You can serve this orzo pasta salad warm or chilled (I like mine chilled, although it is delicious either way!) I love that this salad is a complete meal in itself, and it’s great for a protein-packed snack throughout the day. I served this with crusty French bread that I made in the bread machine and it was a perfect dinner, enjoy!
