Gluten-Free Slow Cooker Swiss Steak and Veggies (Video)

I’m always on the lookout for simple, delicious and healthy recipes. Using my slow cooker is great for busy days and I love coming home to a homemade, complete meal. This Gluten-Free Slow Cooker Swiss Steak and Veggies recipe satisfies all my requirements for a winning recipe. Prepped in less than 10 minutes, this is a perfect meal to throw in the slow cooker for dinner after a busy day. Soy and dairy-free also, this recipe is delicious atop mashed cauliflower for some added nutrition.

To make your own Gluten-Free Slow Cooker Swiss Steak and Veggies, you will need: 2 pounds boneless beef round steak (cut into 6 serving-sized pieces), 2 tablespoons coconut flour (if gluten-free isn’t necessary, regular flour can be used), 1/4 teaspoon salt, 1/2 teaspoon ground black pepper, 2 onions (cut into thin rings), 2 carrots (chopped), 2 stalks celery (chopped), and 2 – 14.5 ounce cans diced tomatoes with Italian seasonings. If you’d like to serve this with mashed cauliflower, you will need one head of cauliflower, also.

After cutting the steak into 6 serving-sized pieces, place the steak into a zip-top baggie. Add the coconut flour, salt and pepper. Zip up the top and shake well to evenly coat all sides of the steaks.

I used a 6 quart slow cooker for this recipe. To the bottom of your slow cooker, add the onions, carrots, and celery. Top the veggies with the coated steaks. Add the diced tomatoes on top of the steaks. Cover and cook on high for 5 hours, or low for 8 hours. Check to make sure the meat is tender before turning off the slow cooker.

If you’d like to serve this with mashed cauliflower, trim and wash one head of cauliflower. Cut into equal medium-sized florets. Fill a large stockpot with water, add the cauliflower and bring to a boil over high heat. Reduce heat to medium-high and boil the cauliflower until fork-tender, about 7 minutes. Drain the cauliflower and add back to the pot. Use a hand masher to mash the cauliflower. If you’d like a smoother consistency, after using the hand masher, use an immersion blender to blend the cauliflower to your desired consistency. To serve, place a large spoonful of mashed cauliflower into a shallow bowl and top with one steak and veggies. Enjoy!

  • Another fun video! This looks like just the thing to come home to after work. I am a big sucker for beef and carrots in any kind of stew. I’m not on any sort of gluten free diet but I am curious about the coconut flour. Does it impart any flavour? Also, if I wanted to spice this up I bet your cajun spice would do very nicely!

    • Thanks! No, the coconut flour doesn’t change the flavor, so if you aren’t gluten-sensitive you can use any flour you prefer. You’re so right, I think the Cajun seasoning would be wonderful in this recipe. Thanks for a great idea 😉

  • I love all of your slow cooker recipes, and they’re perfect now that I’m busier than ever. Over mashed cauliflower makes this swiss steak a great complete meal, and I can make that ahead of time, too, so it’s ready in a flash!
