Love Letter Skinny Vanilla Cupcakes

I just love everything about Valentine’s Day. All the pretty colors make me so happy! Have some fun and spend some time with your loved ones making these sweet Love Letter Skinny Vanilla Cupcakes. Hit the candy store as a family beforehand to pick out all the different candies to represent the individual letters (probably the funnest part of this project!), and then whip up these delicious, yet not-so-bad-for-ya, vanilla cupcakes!

I knew I wanted to use my favorite vanilla-almond buttercream frosting for these cupcakes and that’s why I searched for a skinny vanilla cupcake recipe that still tasted GOOD. I can feel slightly less guilty indulging in these sweet treats knowing that at least the cupcake itself isn’t straight sugar.

Love Letter Skinny Vanilla Cupcakes

To make 12 standard skinny vanilla cupcakes, you will need: one cup all purpose flour, one teaspoon baking powder, half a teaspoon baking soda, half a teaspoon salt, one tablespoon ground flaxseed meal, six tablespoons sugar, one tablespoon vanilla extract, one cup vanilla nonfat Greek yogurt, quarter cup skim milk, and three tablespoons coconut oil.

Preheat your oven to 350°F. Place 12 muffin liners in a standard muffin tin and spray with cooking spray. In a medium bowl, combine all wet ingredients and whisk well. In another medium bowl, combine the dry ingredients and mix well. Add the wet ingredients to the dry ingredients all at once and fold in until just combined. Fill each muffin liner about two thirds full and bake for 20 minutes. Remove the muffins to a cooling rack and allow to cool for at least 10 minutes before frosting.

Now for the fun part! I made my own buttercream frosting, you can make your own or use purchased frosting. Frost each cupcake and then top with candies to spell out the desired messages. I made a double batch of cupcakes and chose the following sentiments: Be Mine, True Love, XOXO, and Kiss Me. Have fun, get creative and enjoy!
