Quick and Easy Spicy Italian Pasta

Ever have those nights when you really don’t want to go to the store, everybody’s hungry and it’s dinner time like now?! That’s what happened a few days ago. Sometimes I get the most satisfaction out of creating a new recipe by just scavenging the pantry and fridge and throwing whatever I’ve got together. Sometimes it turns out great, other times not so much. This time was a definite win and this Quick and Easy Spicy Italian Pasta was born!

To make this Quick and Easy Spicy Italian Pasta, you will need: 4 tablespoons olive oil (divided), 1 onion (chopped), 1 teaspoon red pepper flakes, 1/2 cup pepperoni (chopped), 6-7 cloves garlic (minced), 1 tablespoon salt (for pasta water), 1 pound spaghetti (cooked and drained),  1/4 cup fresh parsley (chopped), 1/2 cup Parmesan cheese (shredded) and 1/2 cup bread crumbs.

You can easily omit, substitute and add ingredients to this recipe. Don’t like onions? Leave them out. Have leftover chicken instead of pepperoni? Sub that in. Feeding kiddos with sensitive pallets? Leave out the red pepper flakes or serve them on the side. Have linguine instead of spaghetti? Works perfectly. You get the picture, the point is to create something with what you’ve got, saving a trip to the store!

This recipe goes quick, so get your pasta going first. I like to add about 1 tablespoon salt to my pasta water, you can skip this step if you’re trying to reduce sodium in your diet. Make sure to reserve about 1 cup of the pasta water when you drain the pasta.

In a skillet over medium-high heat, add 2 tablespoons olive oil. Add the onions and cook about 2 minutes. Add the red pepper flakes and pepperoni, cook for another 2 minutes. Add the garlic and cook and stir for about 30 seconds. Remove the onion mixture to a bowl and set aside.

When the pasta is cooked and drained, return it to the pot. Add the onion mixture, chopped parsley and bread crumbs, adding a little pasta water and olive oil to reach your desired consistency and texture. Season with salt and pepper and garnish with the shredded Parm. That’s it, round this dish out with a fresh salad and some crusty bread, enjoy!
