Using pantry staples, this very quick Caramelized Lemon, Tuna, and Mozzarella Tubini is a delicious way to get the health benefits of fish into your diet!

  1. Cook your pasta according to the package directions. Gently toast the bread in a skillet over medium heat with a little olive oil until toasty, set aside. In the same skillet, place the lemon halves cut side down and allow them to cook and caramelize, about 5-6 minutes. Set aside.
  2. Open and drain the tuna, reserving some of the oil for the finished dish. Drain the pasta, place it in the skillet used to toast the bread and caramelize the lemons. Add the chopped red onions, minced garlic, tuna, and some of the oil from the tuna cans. Toss to coat, season with salt and pepper, and remove to a platter.
  3. Top with the fresh mozzarella and some fresh parsley if desired. Squeeze the caramelized lemons over the top and garnish with the toasted bread. Serve immediately and enjoy!
