You only need two ingredients for this recipe: 5-6 pounds boneless, skinless chicken breast, and one cup barbecue sauce. As I said above, you can use homemade or store-bought sauce. Place the chicken breast in the bottom of your slow cooker, I used a 6 quart capacity slow cooker for this recipe. Pour the barbecue sauce over the top of the chicken, cover, and cook on high for approximately three and a half hours. Temp test your chicken to at least 165°F. Once your chicken is to temp, shred it with two forks right in the slow cooker. Replace the lid and allow the shredded chicken to rest for about 10 minutes.
The first night we had this delicious, moist barbecue chicken on buns with side salads. I enjoyed the rest of it on salads for lunch the rest of the week. I ran the numbers and this recipe comes out to be about $.68/serving when served as sandwiches, including the buns! Besides sandwiches and salads, this chicken would be great in soups, wraps, or just by itself! I’d love to hear how you use this easy Money-Saving Slow Cooker Shredded BBQ Chicken in your home!
