The first step in making this dish healthier is to make your own Cajun seasoning. Store bought seasoning mixes are always higher in sodium compared to something you make at home. It really is so simple. Click here for the recipe.
Make sure to have this prepared before you begin. I like to make a big batch of this and have it on hand for various recipes. You can even use it to season chicken, fish or steaks before throwing them on the grill!
Weigh out one pound of boneless, skinless chicken breast and pound to about a quarter inch thickness. Cover both sides with plastic wrap. I don’t pound meat often so I don’t own a meat mallet. I used a very large flashlight handle and it worked perfectly! Sometimes you just have to get a little creative in the kitchen!
Wash and trim one and a half cups fresh green beans. We were lucky enough to have fresh ones from the garden for this recipe and they were SO delicious! Dice one medium tomato and zest one lemon.
Cook two cups penne pasta according to the package directions and add the green beans during the last three minutes of cooking time. Drain and set aside.
Season the chicken breast on both sides with four teaspoons of your homemade Cajun seasoning. Melt two teaspoons butter over medium heat in a large skillet. I used my electric skillet for this recipe and it worked great! Once the butter is melted, add the chicken and cook for about two minutes on both sides to brown. Add one tablespoon water, cover and allow chicken to cook for about three minutes.
When the chicken is cooked through, remove to a cutting board while you prepare the sauce.
To the same skillet, add half a cup heavy whipping cream, one cup milk, half a teaspoon pepper, half a teaspoon garlic powder and the lemon zest. Stir this together over medium heat for about two minutes.
Cut the cooked chicken into bite size pieces and return to the skillet with the sauce. Add the cooked pasta, green beans and diced tomatoes.
Doesn’t that just look amazing!? This tasted so good and I didn’t feel guilty eating it at all since I knew I had drastically reduced the fat, calorie and sodium content of this yummy dish.
