Make sure to have this prepared before you begin. I like to make a big batch of this and have it on hand for various recipes. You can even use it to season chicken, fish or steaks before throwing them on the grill!

Skinny Chili's Cajun Chicken Pasta

Weigh out one pound of boneless, skinless chicken breast and pound to about a quarter inch thickness. Cover both sides with plastic wrap. I don’t pound meat often so I don’t own a meat mallet. I used a very large flashlight handle and it worked perfectly! Sometimes you just have to get a little creative in the kitchen!

Wash and trim one and a half cups fresh green beans. We were lucky enough to have fresh ones from the garden for this recipe and they were SO delicious! Dice one medium tomato and zest one lemon.

Cook two cups penne pasta according to the package directions and add the green beans during the last three minutes of cooking time. Drain and set aside.

Season the chicken breast on both sides with four teaspoons of your homemade Cajun seasoning. Melt two teaspoons butter over medium heat in a large skillet. I used my electric skillet for this recipe and it worked great! Once the butter is melted, add the chicken and cook for about two minutes on both sides to brown. Add one tablespoon water, cover and allow chicken to cook for about three minutes.

When the chicken is cooked through, remove to a cutting board while you prepare the sauce.

To the same skillet, add half a cup heavy whipping cream, one cup milk, half a teaspoon pepper, half a teaspoon garlic powder and the lemon zest. Stir this together over medium heat for about two minutes.

Cut the cooked chicken into bite size pieces and return to the skillet with the sauce. Add the cooked pasta, green beans and diced tomatoes.

Above you will find some of the equipment I used while creating this dish. I love my electric skillet for dishes like this and use mine very often! It’s also the best for making pancakes. I use a small hand-held zester like this one when I need to zest lemons and oranges for recipes. A little zest can make a big difference in a lot of dishes and I find this model to work better than my big box grater. My Victorinox knives are my favorite and I reach for them first every time! This is the exact same model of bread machine I have and I absolutely love it! I don’t purchase bread anymore, just make a loaf in this once or twice a week. It takes about five minutes to add the ingredients to the machine and then it does the rest for you!

  1. First, make your Cajun seasoning. Cook the pasta according to the package instructions and add the green beans during the last 3 minutes of cook time. Drain and set aside.
  2. Pound the chicken breast to a 1/4" thickness, and season both sides of the chicken with 4 teaspoons Cajun seasoning. Melt the butter over medium heat and cook the chicken for 2 minutes on each side. Add 1 Tbsp water, cover and cook for 3 minutes. Remove the chicken to a cutting board.
  3. To the same skillet, add the cream, milk, pepper, garlic powder, and lemon zest. Stir and cook over medium heat for about 2 minutes. Chop the chicken into bite-sized pieces and return to the skillet along with the pasta, green beans, and tomatoes, Stir to combine and enjoy!
