  1. Place your chicken breast in the bottom of your slow cooker. I used a 6 qt slow cooker for this recipe. Add the corn, beans, tomato sauce, salsa, and taco seasoning to the slow cooker and stir to combine.
  2. Cover and cook on high for 3 hours. Temp test your chicken to at least 165°F. Take each chicken breast out separately and shred, adding back to the slow cooker as you go. Allow the soup to rest about 15 minutes before serving.
  3. Either eat this as taco soup with corn chips, shredded cheese and plain Greek yogurt, or on top of lettuce and topped with traditional taco garnishes such as those listed above. Enjoy!
