I am totally IN LOVE with this waffle recipe. The original recipe calls it a clean eating waffle but what makes me love it even more is that it calls for only four ingredients! The pro’s of this recipe go on and on, so to save time, I’ll list them here: no added sugar, no added butter or oil, made with ingredients we usually have on hand, EASY, and fun to customize. Let’s get started with these super easy 4 ingredient waffles!

The flavor of these waffles is perfect. I like to add a little vanilla extract to the batter, almond extract would be good too. It’s up to you, use what you like or leave it out altogether.

Super Easy 4 Ingredient Waffles

 This recipe really is so quick. Gather together two eggs (gently beaten), three cups milk, two cups whole wheat flour, and two teaspoons baking soda. And one teaspoon vanilla extract, if you wish. The original recipe says any kind of milk will work, I prefer almond milk because it’s what I usually have on hand. It also calls for white whole wheat flour, but all I had was straight whole wheat and it works perfectly!

Combine all ingredients together in a medium mixing bowl. Whisk until smooth.

Cook your waffles according to your waffle maker’s directions. I have the basic model from Walmart and have experimented enough to get it down perfectly! 2/3 cup waffle batter for 4 minutes. I am a timer addict, so yes, I time each waffle. I spray both the top and bottom of my waffle maker very lightly with non-stick spray before each waffle.

I used to dread making waffles because I hated making one at a time, but now I use those 4 minutes in between to clean up dishes and prepare the rest of breakfast. I turn my oven on warm and keep the finished waffles there throughout the process.

We like to top them with a little whipped cream, syrup and fruit, I’m partial to blueberries. I love fresh but frozen are tasty too! I always try to find the wild blueberries for their additional nutrition factor, they have two times the antioxidants found in cultivated varieties!  I can usually find them frozen at Natural Grocers, or stores similar to that. Trader Joe’s has the dried variety, which are good in oatmeal too! The wild blueberries are smaller and so cute! Enjoy!

Ingredients
  • 2 eggs slightly beaten
  • 3 cups milk any kind will do, I prefer almond milk
  • 2 tsp baking soda
  • 2 cups flour any kind, I prefer whole wheat

Instructions
  1. Crack eggs into large mixing bowl and whisk gently. Add remaining ingredients and mix well until smooth.
  2. Cook according to your waffle maker's instructions. I do 2/3 cup batter for four minutes. Keep waffles warm in oven while preparing or eat them as you go!
  3. Serve warm with your favorite waffle toppings: syrup, whipped cream, fruit, peanut butter, honey, and/or nuts!
  4. These waffles freeze well. I place 3-4 in a zip top baggy with wax paper between each one. Simply reheat in the toaster!
