  1. Move your oven rack to the top-middle position and preheat your broiler. Heat 2 tablespoons of the butter over medium heat, add the onion and red pepper. Cook until softened, about 5 minutes.
  2. Meanwhile, whisk together the eggs, half and half, and 1/2 teaspoon each salt and pepper, set aside. Add the garlic to the skillet and cook, stirring constantly, for 30 seconds. Remove the onions, pepper and garlic to a plate and set aside.
  3. Add the remaining 2 tablespoons butter to the skillet. Add the potatoes and cook until they just start browning up, about 5-7 minutes. Season with an additional 1/2 teaspoon each salt and pepper. Add the kielbasa, salami and Italian sausage. Cook until browned, about 3 minutes.
  4. Whisk the onion, pepper and garlic into the egg mixture along with the cheese and chopped parsley. Pour the egg mixture over the potatoes and meat in the skillet. Stir, scraping along the bottom, with a heat-proof rubber spatula until the eggs begin creating large clumps, about 4 minutes.
  5. Shake the skillet to distribute all the ingredients evenly and allow to cook for 30 seconds. Place the skillet under the broiler and cook until the top begins to brown nicely, about 5 minutes. Allow the dish to rest on a wire rack for about 5 minutes, slice and serve. Enjoy!
