This Simple Healthy Slow Cooker Pulled Pork recipe produces juicy pork that is perfect for sandwiches, burrito bowls, wraps, tacos and salads. Quick, easy, delicious and healthy, this is one recipe that definitely satisfies all my criteria for a keeper. I’ve made this several times and have simplified and made it as healthy as it can be while retaining its delicious flavor.

To make your own Simple Healthy Slow Cooker Pulled Pork, you will need: 1/4 cup smoked paprika, 3 tablespoons brown sugar, 2 tablespoons chili powder, 1 tablespoon cumin, 1 tablespoon ground black pepper, 2 teaspoons salt, 1 boneless pork butt (5-6 pounds), and 2 cups chicken broth.

Combine the first 6 ingredients together in a bowl for your spice rub and stir. Rub the spice rub all over the outside of your pork butt, making sure to cover the entire surface. Place the pork butt in your slow cooker with the fat cap up. I use my 6-quart slow cooker for this recipe. Add the chicken broth to the slow cooker, cover, and cook on LOW for 7-8 hours.

When the cooking time is up and the meat is tender (you should be able to very easily pierce it with a fork), remove the pork butt to a rimmed baking sheet and allow it to rest and cool about 10 minutes. Using two forks or your hands (I wear gloves and use my hands as I find this is the quickest way to shred the meat), remove the fat cap and shred the meat, removing any additional fat as you go. My favorite way to enjoy this delicious meat is on homemade burrito bowls, how will you serve it?
