Taco soup is definitely one of my favorite things about fall. Traditionally, I’ve always made the ground beef version. This Slow Cooker Chicken Taco Soup is just as delicious and, I have to say, even easier than my ground beef recipe!

The first time I made this recipe it was still quite hot outside. I decided to serve it “burrito bowl” style on a bed of chopped Romaine and topped with traditional taco garnishes: plain Greek yogurt, shredded cheese, diced tomatoes and jalapenos, salsa and corn chips. Whichever way you serve it, it is sure to please everyone!

There are so many reasons why I LOVE this recipe. First, no chopping raw chicken. Second, this recipe only requires seven ingredients! Third, prep is so easy, you’ll have this going in the slow cooker in under five minutes.
To make this slow cooker chicken taco soup, you will need: about two and a half pounds boneless, skinless chicken breast, one can each corn, kidney beans, and black beans, drained and rinsed, two-eight ounce cans tomato sauce, one cup salsa, and three tablespoons taco seasoning.
I used my Homemade Taco Seasoning for this recipe. Super easy to make and way better for you than the store-bought packets. Not to mention you’ll save money making your own taco seasoning as well. You can substitute a store-bought packet of taco seasoning in this recipe if you wish.
As I mentioned above, this recipe is super versatile. You can enjoy a big bowl of warming soup on a blustery day, or use this Slow Cooker Chicken Taco Soup as a DIY burrito bowl on warm fall days. I know no matter how you serve it, you’re going to love this easy, healthy and tasty recipe! Enjoy!
