Slow Cooker New England Clam and Vegetable Chowder (Video)

New England Clam Chowder has always been one of my favorite soups. This soup is made even better when I can throw everything together in my slow cooker and forget about it for hours. I really love my recipes heavy on the vegetables, several times I’ve had to transfer a recipe to a larger pot because it’s outgrown the one I started with. I just barely managed to keep this Slow Cooker New England Clam and Vegetable Chowder within the confines of my 6 quart slow cooker. This would be the perfect recipe for feeding a crowd, or for planned leftovers.

To make your own Slow Cooker New England Clam and Vegetable Chowder, you will need: 2 pounds red potatoes (scrubbed and diced), 1 pound carrots (peeled and sliced), 2 stalks celery (chopped, I like to add some celery leaves also), 2 onions (chopped), 5 slices thick-cut bacon (diced and cooked), 2-10 ounce cans whole baby clams, 6 cloves minced garlic, 1 teaspoon beef flavored Better than Bouillon (you can sub alternative beef stock or beef bouillon granules), 1 tablespoon Worcestershire sauce, 1/2 teaspoon dried thyme, 1/2 teaspoon ground black pepper, 1/2 teaspoon salt (I like sea salt), 6 cups water, 2.5 cups milk (I used whole), and 2 tablespoons flour.

Yes, I realize this is not the shortest list of ingredients ever. But trust me, it’s worth it! Even though there are a lot of ingredients, all of them are super easy to prep. You could even use your food processor to speed up the process of chopping the vegetables if you wanted to.

Combine everything in the slow cooker except for the milk and flour. Stir to combine and cook for 3.5 hours on HIGH. Combine the milk with the flour till smooth and stir into the slow cooker. Cover and cook for an additional 30 minutes. Enjoy!
