Super Easy Chunky Red Mashed Potatoes

I have died and gone to carb heaven. Which is alright with me during this busy holiday season. These super easy chunky red mashed potatoes are perfect without gravy and are so amazingly delicious, you will want to make them again and again.

I love serving this tasty dish alongside my Simply Amazing, 5 Ingredient Oven Roasted Chicken. These potatoes were a big hit at my house, I was asked to make them again just one week later.

Super Easy Chunky Red Mashed Potatoes

The hardest part of this recipe is scrubbing your red potatoes. I use steel wool, you could also use a stiff brush. For this recipe, you’ll need about three and a half pounds red potatoes. Once your potatoes are nice and clean, quarter them and place them in a large stock pot. Cover with water, add about two teaspoons salt, and bring them to a boil over high heat. Once boiling, reduce the heat to medium low and gently boil for about 25 minutes. They are done when you can easily pierce them with a fork. Strain the potatoes and return them to the pot.

While the potatoes are boiling, take half a cup sour cream out of the fridge to warm up a bit. In a microwave safe bowl, combine a quarter cup unsalted butter and half a cup milk. Heat in the microwave, in 30 second intervals, until the butter is melted. Stir in between heating sessions.

Use a potato masher to mash the potatoes. I like mine chunky, so mash to your own desired consistency.

Add the butter/milk mixture, the sour cream, and season with salt and pepper. Mash this in to combine.

I used steel wool but I have a feeling I’m going to want to invest in one of these handy potato scrubbers soon!

I use a basic, nothing fancy, potato masher. I’ve had the same one forever and it works great!

My Victorinox knives are my favorite and I reach for them first every time. This chef’s knife is especially useful while quartering the potatoes.

Wooden cutting boards are by far my favorite. A medium sized board is all you need for this recipe.

  1. Scrub your potatoes with steel wool or a stiff brush. Quarter and place in a large stock pot. Cover with water and add the salt. Bring to a boil over high heat, reduce heat to med low and gently boil for about 25 minutes.
  2. While the potatoes are boiling, remove the sour cream from the fridge to warm a bit. Combine the milk and butter in a microwave safe bowl and heat, in 30 second intervals, until the butter is melted.
  3. When the potatoes can easily be pierced with a fork, drain and return them to the pot. Use a handheld potato masher to mash the potatoes to your desired chunkiness. Add the milk/butter mixture, the sour cream, and season with salt and pepper. Mash this in to combine. Serve warm, enjoy!
