The Best One-Pan Honey Garlic Chicken

Here’s another quick and easy weeknight dinner recipe! The Best One-Pan Honey Garlic Chicken is great because everything bakes in one pan and there’s not a lot of prep! And no slicing raw chicken, one of my least favorite things to do in the kitchen for sure. All you have to do is mince some garlic and chop some potatoes and broccoli. That’s it besides mixing the sauce, and who doesn’t love measuring ingredients out and whisking them together?! The aroma of the sauce is so yummy and I’m telling you the flavor is just perfection.

The Best One-Pan Honey Garlic Chicken

The ingredient list for this recipe is relatively short. You will need: four tablespoons olive oil, two tablespoons melted butter, two tablespoons honey, two tablespoons brown sugar, one tablespoon Dijon mustard, three cloves minced garlic, half a teaspoon each dried basil and oregano, a quarter teaspoon each salt and pepper, four potatoes (I use either red or golden) cut into one inch pieces, six boneless, skinless chicken thighs, and four cups chopped broccoli.

Preheat your oven to 400°F. Coat a 9″ X 13″ glass baking dish with one tablespoon olive oil. Place the chopped potatoes in the bottom and drizzle with one tablespoon olive oil, season with salt and pepper. Place the chicken thighs on top. I unfold the thighs so they have more surface area for the sauce. In a small bowl, combine the remaining two tablespoons olive oil, butter, honey, brown sugar, Dijon mustard, minced garlic, basil, oregano, salt and pepper. Whisk well to combine and spread on top of the chicken thighs. Place in the oven to bake for 25 minutes. Remove from the oven, move the chicken to a plate and add the chopped broccoli. Stir to incorporate, replace the chicken and return to the oven to bake for an additional 10 minutes. After 10 minutes, turn your oven to broil, leave in for three minutes and then remove. Temp test your chicken to at least 165°F.
