This recipe was inspired by my man. This may be a bit of an exaggeration, but I’m betting he didn’t eat a lot of veggies before we met. The first time I told him I was making homemade pizza with onions, mushrooms and spinach, he was speechless (or disgusted, either way, not impressed.) Lucky for him, he wasn’t dining with me that evening! He’s often accused me of going too light on the meat in recipes so I decided this time, I was going all in! This Three Meat, Egg, Cheese and Potato Breakfast Skillet is certainly heavy on the meat and flavor! And I still managed to sneak in some veggies for good measure.

To make this Three Meat, Egg, Cheese and Potato Breakfast Skillet, you will need: 12 eggs, 3 tablespoons half and half, salt and pepper, 4 tablespoons unsalted butter, 1 onion (chopped), 1 red bell pepper (chopped), 5 cloves minced garlic, 2 cups frozen diced potatoes, 2 cups kielbasa (cut into 1/2″ pieces), 1 cup thick-cut dry salami (cut into 1/2″ pieces), 1 cup Italian sausage (cooked and cut into 1/2″ pieces), 2 cups shredded extra-sharp cheddar cheese, and 2 tablespoons chopped fresh parsley.
Move your oven rack to the top-middle position and preheat your broiler. Heat 2 tablespoons of the butter over medium heat, add the onion and red pepper. Cook until softened, about 5 minutes. Meanwhile, whisk together the eggs, half and half, and 1/2 teaspoon each salt and pepper, set aside. Add the garlic to the skillet and cook, stirring constantly, for 30 seconds. Remove the onions, pepper and garlic to a plate and set aside. Add the remaining 2 tablespoons butter to the skillet. Add the potatoes and cook until they just start browning up, about 5-7 minutes. Season with an additional 1/2 teaspoon each salt and pepper. Add the kielbasa, salami and Italian sausage. Cook until browned, about 3 minutes.
Whisk the onion, pepper and garlic into the egg mixture along with the cheese and chopped parsley. Pour the egg mixture over the potatoes and meat in the skillet. Stir, scraping along the bottom, with a heat-proof rubber spatula until the eggs begin creating large clumps, about 4 minutes. Shake the skillet to distribute all the ingredients evenly and allow to cook for 30 seconds. Place the skillet under the broiler and cook until the top begins to brown nicely, about 5 minutes. Allow the dish to rest on a wire rack for about 5 minutes, slice and serve. Enjoy!
